Chevy's Fresh Mex was founded in California in 1986. Known for its freshly prepared Mexican dishes that are served in a fun, casual atmosphere, Chevy’s Fresh Mex in Lake Buena Vista has been redesigned with a creative, contemporary look that combines the relaxed feel of a Mexican cantina with a fun edge and lots of personality.
Its classic entrees like Mixed Grill Fajitas and Mesquite-Grilled Carne Asada are now joined by the Baja Sampler, which includes a beer-battered Mahi-Mahi Taco, Sherry Chipotle Chicken Enchilada and two Jalapeño Bacon-Wrapped Shrimp. Another favorite is the tableside-prepared guacamole, which is great for sharing.
The already large beverage menu is even bigger, and includes the signature Cadillac Margarita, assorted flavors of frozen margaritas, and the CuatroRita — a giant margarita for four people that’s paired with four Coronitas beers. There’s also a full-liquor bar, beer and wine. Happy hour is Monday-Friday from 3-6 p.m., and Sunday-Thursday from 9 p.m.-2 a.m. It includes $3 off margaritas and craft cocktails, and $3 well drinks. Both happy hours also have a specially priced appetizer menu.
The new design features two hand-painted murals, a beer-bottle chandelier, expanded main bar, and high-top tables in the Cantina, as well as a new outdoor bar and patio area with full menu and beverage service. The main dining area has booths and large tables for parties of any size.
